Fendant (Chasselas) from the canton of Valais is a Swiss wine icon. This example comes from the extraordinary terroir of Fully, known for its fantastically elegant wines. It is of pale straw color, with a green tinge on the rim. Fragrant white flowers on the nose, with notes of honey and white peach. On the palate, the flowery character is complemented by beeswax, and an exotic note of tangerine in the background. Dry, fresh, without any heaviness.
Serving suggestions: A great aperitif wine, maybe with small snack of Swiss cured meat; deservedly a classic with fondue and raclette, or any other Swiss cheese dishes. However, equally good with white fish (sea or lake) and shellfish. In Japan, it is a fashionable drink with sushi.
