This blend of the classic Valpolicella grapes Corvina, Corvinone and Rondinella (plus other indigenous varieties) has all the Intensity of flavor and richness of body of an Amarone, yet manages to feel also fresh and juicy, with spices (star anise, cinnamon) and chocolate, even tobacco notes overlaying the ripe cherry and plums fruit; a very expressive and balanced wine, with a distinctive minerality especially in the finish. Organic wine.
A villa was first built on the location of the estate of Novaia – meaning new courtyard, or new settlement – in the 15th century, whole winemaking was started in the 19th century by the Vaona family, still living there today. Around 40,000 bottles of Valpolicella Classico, Recioto, and of course Amarone are produced from 7 hectares of vines. The conversion to organic viticulture was achieved in 2014.
Winemaking is traditional and artisanal: the hand-picked grapes for Amarone are let to dry naturally for about a hundred days in the process of appassimento, to increase concentration and complexity of flavors.
Serving suggestions: Wonderful with aged hard cheese! Richly flavoured stews and roasts are also great matches. Or then just enjoy it on its own.
